Pine Barbecue Sauce

One of my favorite holiday rituals is the festive feast we have every year. Our family’s traditional Christmas dinner features pork ribs slathered in homemade pine barbecue sauce.

My kids love barbecue ribs and infusing the sauce with pine adds a seasonal touch.

Pine Barbecue Sauce

Ingredients
  

  • 1 cup water
  • 1/4 cup pine needles
  • 8.5 oz tomato paste
  • 2-3 tbsp brown sugar
  • 1 tbsp vinegar Ideally, infused with pine needles
  • 1 tsp salt
  • 1 pinch cinnamon

Equipment

  • 1 small pot with lid
  • 1 strainer

Method
 

  1. Add the pine needles to a small pot. Pour boiling water over them and cover the pot with a lid. Let steep until the liquid has cooled.
  2. Strain out the plant matter and return the pine needle infusion to the small pot. Stir in the remaining ingredients. Simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened a bit.
  3. Remove the pot from the heat and let the barbecue sauce cool. Store it in a clean, glass jar in the refrigerator.
