Blueberry Salsa

This blueberry salsa is a fresh take on the classic Mexican salsa, pico de gallo. The bright flavors of lime and cilantro, compliment blueberry’s deep fruity notes, making for a delicious condiment that pairs perfectly with tacos, tortilla chips, quesadillas, and so much more!

Ingredients:

  • 1½ cup blueberries
  • 1 small red onions, finely chopped
  • ¼ cup cilantro, finely chopped
  • 1½ Tbsp lime juice
  • Salt, to taste

Directions:

Add all ingredients to a small bowl and stir well to combine. Cover and put into the refrigerator to allow the flavors to meld for at least 15 minutes, or up to a few hours.

It will keep for a few days in the fridge.
