Winter Solstice Crinkle Cookies

Ingredients
  

Dough
  • 1 cup panela or brown sugar
  • 1/3 cup melted butter
  • 2 eggs
  • 1 tsp orange exrtract
  • 1/2 tsp salt
  • 1 tsp cinnamon powder
  • 1 tsp ginger powder
  • 2 tsp pine powder
  • 2 cups flour
  • 1 tsp baking powder
Coating
  • 1/4 cup powdered sugar
  • 1 tsp pine powder
  • 1/4 tsp ginger powder

Equipment

  • 1 large mixing bowl
  • 2 baking sheet
  • parchment paper

Method
 

  1. Mix together panela (or brown sugar), butter, eggs, and orange extract in a large mixing bowl. Stir until combined. Mix in the salt, spices, flour, and baking powder.
  2. Cover the bowl and refrigerate for 1-2 hours.
  3. When it’s time to bake, preheat the oven to 350°F and line 2 cookie sheets with parchment paper.
  4. Roll the dough into 1 inch balls and toss in the coating. Place on the baking sheet, spacing evenly.
  5. Bake for 15-20 minutes, until the cookies have puffed up and turned a light golden color.
  6. Let the cookies cool completely then store in an airtight container.
