Elderberry Barbecue Sauce

Ingredients
  

  • 1 cup water
  • 2 tbsp dried elderberries
  • 8.5 oz tomato paste
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp salt

Equipment

  • 1 Small pot
  • 1 strainer
  • 1 jar

Method
 

  1. You will first make a strong elderberry decoction, or simmered tea. Add the elderberries and water to a small pot. Cover with a lid and bring to a boil, then reduce heat and simmer for about 15 minutes.
  2. Let the decoction cool to room temperature, then strain out the elderberries and set the liquid aside.
  3. In a small sauce pan combine the elderberry decoction with the remaining ingredients. Simmer on low heat for about 10 minutes, stirring often.
  4. Let the sauce cool. Then pour it into a jar. Store in the refrigerator.
